The gastronomical tradition of Ibi detaches itself from the tipical
mediterranean diet, mainly because its location gives the village some
special characteristics in some of the dishes, mainly for being an interior
place. Due to to that fact, the fish, so characteristic on the local
cuisine, does not have so much relevancy as in the coastal cities, but
the rice, as in all the valencian community, is still a mandatory ingredient.
The local "stars" to taste are the "arrós amb
conill caldós" , "giraboix", olleta, and naturally
the ice creams wich gave it its fame.
